Chef Michel Guérard, 91, three Michelin stars since 1977, died during the night between Sunday and Monday. The first chef to appear on the cover of Time Magazine in the United States, Guérard is considered by some critics and many of his colleagues to be one of the most talented chefs of the 20th century. In the 1970s, he revolutionized gastronomy with “nouvelle cuisine,” of which he was one of the leaders, and invented a new repertoire of “slimming cuisine” for gourmets who were watching their figure.
